Meet Antonio at his home and start your authentic Mayan food experience with guacamole and sikil paak (tomato-pumpkin seed salsa) while Antonio describes the menu. Next join him in the kitchen to learn to cook a traditional Mayan meal from recipes he learned from his mother and has perfected working as a food professional. Your hands-on cooking class will last about 2 hours and you will learn to cook 3 dishes including a soup, ceviche and main course. For soup, you may learn to make sopa de lima (chicken and lime soup) or crema de calabasa yucateca (creamy Mayan squash soup served in a squash bowl). For the main, you might cook pescado tikin-xic (Mayan fish steamed in banana leaves) and served with a side vegetable. Antonio enjoys creating traditional Mayan dishes with a creative personal touch. Antonio may have a sous chef join to help with prep and clean up. You will also visit a local market store to learn about regional ingredients such as naranja agria and the variety of chilies.
